Had an incredible evening at Hoze Sushiya. Incredible food and we had great conversations with the chef who explained how and why everything was prepared the way it was. The experience is well worth a trip to Gothenburg and I hope that I will have a chance to visit it again soon.

Fantastic Ramen. They also have omakase seating and is the only one in town and he does it superbly well. Just remember to book in time.

I visited Hoze with some foodie friends last year and we all loved it. I had tried to book several times in the past and it never worked out but I finally got a spot. Let me start by saying that the feeling you get in the restaurant is really special. It is traditional Japanese style but with a colder Swedish touch. The focus is the sushi. No alcohol is served here so that you can be focused on the fish, which is primarily locally sourced. I got to taste things I hadn’t before. You start with a few otsumami (small appetizers), then the nigiri, and finally dessert (usually some fruit). This is typical in edomae sushi progression. If Jose is anything, I would say he’s a total geek (otaku in Japanese). He travels yearly to Japan to constantly improve. He is obsessed with perfection and extremely attentive to detail. You definitely feel like he is knowledgeable about Japanese cuisine and culture; and more specifically sushi and fish. I highly recommend you visit and book in advance. Worth a special trip.
The service is nice and friendly. They offer the best sushi in Gothenburg. They use rice from Nigata and texture of rice is just right. The portion of the course is small. I wish there was more sushi in the course as I think their sushi is their strength in this restaurant. The flat fish broth was fishy and surprisingly this was served as a soup. The dessert was small cut strawberries marinated with vinegar. It was lack of creativity. I really wish I liked this restaurant as I love the concept of Japanese with Spanish and Scandinavian affair but Hoze just doesn’t execute enough. Bottom line it is not that impressive for people who experienced Japanese cuisine in Japan. I took my father who was visiting from Japan and he felt it was just ok but expensive for their quality of dishes. Additionally they do not offer liquors hence no sake to compliment dishes.
